I just automatically assumed that they did this mostly to limit the amount blood and violence shots in order to keep the PG-13 rating in a movie about killing kids. Anyway, I like the analogy to writing. Writing action can be terribly difficult. I wanted to be able to see their creations clearly :( Shakey-cam was indeed frustrating, especially when I just wanted that darn camera to hold still so I could take a good look around. Sometimes it's difficult to convey the chaos going on around the pov character while moving him/her through the scene. I spend a lot of time watching youtube videos of fights so that I can choreograph a scene.
